Open all day, every day, TOMATE sits at the bottom of the main Dalt Vila entrance, in the far corner of the newly pedestrianised market square.
If you have done the walking tour of the Old Town, or want a good excuse not to do the walking tour of the old town, Tomate is just about the best shady place to sit and do absolutely bugger all, without anyone discovering you there.
The bar provides drinks (including a large collection of imported bears), snacks, a very chilled out atmosphere, and not least of all Tomate has immediately become one of Ibiza's better Chinese restaurants - it is well worth returning in the evening with a group of friends to enjoy a long lazy Chinese meal. (After showering and lying to all and sundry at the hotel, about the days petty exertions around the Dalt Vila.)
Also highly recommended if you are waiting for friends having random parts of their body tattooed next door.
